Chicken Sopa

  • 1 (2 1/2 lb.) frying chicken
  • 2 cans cream of chicken soup
  • 1 can evaporated milk
  • 1 (4 oz.) chopped green chiles
  • 1/2 tsp. salt
  • 12 tortillas (flour)
  • 2 Tbsp. shortening
  • 1 medium onion, chopped
  • 1 lb. Cheddar cheese, grated

Directions

    Boil the fryer (reserve stock).

    Remove meat from bone and cut into small pieces.

    Combine liquids and stir in chicken, chiles and salt.

    Cut tortillas in half.

    Dip into hot shortening a few seconds.

    Put a layer of tortillas in bottom of casserole dish, 9 x 13-inch.

    Spoon on a layer of chicken mixture.

    Sprinkle with cheese and onion.

    Repeat until all is used.

    Bake at 350° until bubbling, 30 minutes.
