- 1 (2 1/2 lb.) frying chicken
- 2 cans cream of chicken soup
- 1 can evaporated milk
- 1 (4 oz.) chopped green chiles
- 1/2 tsp. salt
- 12 tortillas (flour)
- 2 Tbsp. shortening
- 1 medium onion, chopped
- 1 lb. Cheddar cheese, grated
Directions

1Boil the fryer (reserve stock).

2Remove meat from bone and cut into small pieces.

3Combine liquids and stir in chicken, chiles and salt.

4Cut tortillas in half.

5Dip into hot shortening a few seconds.

6Put a layer of tortillas in bottom of casserole dish, 9 x 13-inch.

7Spoon on a layer of chicken mixture.

8Sprinkle with cheese and onion.

9Repeat until all is used.

10Bake at 350° until bubbling, 30 minutes.

11Serves 8 to 10.
