- 6 lb. chicken back and parts
- 3 to 4 qt. water
- 3 peeled onions
- 2 cloves garlic
- 1 1/4 Tbsp. salt
- 3 peeled carrots
- 1 bunch parsley
- parsley root
- fresh or dried dill
Directions

1Soak the chicken parts in cold water, changing the water frequently.

2Place the water, chicken and onions in a large pot and bring to a boil.

3Simmer 2 to 3 hours.

4Add remaining ingredients; cover and simmer for another hour or so.

5Serve with noodles, rice or matzo balls.
