Chicken Soup

Ingredients

  • chicken pieces Whole, with the skins!, eg. 2 wings, a neck, and 1-2 medium sized pieces like the thigh and a leg, or breast.
  • 2 carrots chopped into very large pieces
  • 1 onion chopped into quarters
  • water
  • salt I like to use black rock salt

Directions

    Clean the chicken (keep skin on!) and add to pot. Add the onion and carrots on top.

    Let them simmer medium low heat for about 15 minutes. Stir once in a while.

    Add water and bring to a boil. (Faster - you can also just heat water in an urn and pour it in.)

    Add salt to taste.

    Let it all simmer on low for at least 2 - 2.5 hrs but it can sit for longer if you want, taste it to see how you like it.
