- 3 Tbsp. olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 3 carrots, diced
- 6 c. celery ribs, diced
- 1 (8 oz.) can water chestnuts, sliced
- 4 Tbsp. dried basil
- 3/4 tsp. dried red pepper flakes
- 5 c. mushrooms, sliced
- 3 red bell peppers, diced
- 12 small red potatoes, diced
- 5 (14 1/2 oz.) cans chicken broth
- 1 lb. diced, cooked chicken
- 2 Tbsp. hoisin sauce
- salt and pepper to taste
Directions

1Saute onion in a 6-quart pot over medium heat until golden brown.

2Add the next 4 ingredients and cook for 3 minutes.

3Then add the next 5 ingredients and cook 3 minutes.

4Add broth and cook 20 minutes, or until potatoes are done.

5Then add chicken and hoisin sauce, cooked 5 minutes.

6Salt and pepper to taste.
