Ingredients

  • 3 Tbsp. olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, diced
  • 6 c. celery ribs, diced
  • 1 (8 oz.) can water chestnuts, sliced
  • 4 Tbsp. dried basil
  • 3/4 tsp. dried red pepper flakes
  • 5 c. mushrooms, sliced
  • 3 red bell peppers, diced
  • 12 small red potatoes, diced
  • 5 (14 1/2 oz.) cans chicken broth
  • 1 lb. diced, cooked chicken
  • 2 Tbsp. hoisin sauce
  • salt and pepper to taste

Directions

    Saute onion in a 6-quart pot over medium heat until golden brown.

    Add the next 4 ingredients and cook for 3 minutes.

    Then add the next 5 ingredients and cook 3 minutes.

    Add broth and cook 20 minutes, or until potatoes are done.

    Then add chicken and hoisin sauce, cooked 5 minutes.

    Salt and pepper to taste.
