Stuffed Squash

Ingredients
- 3 medium squash, green or yellow
- 1 boiled egg, chopped
- 2 Tbsp. chopped onion
- 3 strips bacon
- salt
- pepper
- 1/2 c. stuffing mix or 1/2 c. bread crumbs or crackers, broken up
Directions

1Parboil squash in water until barely tender.

2Cool and cut in half lengthwise. Scoop out inside of squash leaving 1/4 inch shell.

3Mix scooped out portion with stuffing, onions, egg, salt and pepper.

4Place back in cavities of squash.

5Place in greased baking dish.

6Top each half with 1/2 strip of bacon.

7Bake at 400° until bacon is browned.
