  • 1 (5 lb.) hen, boiled
  • 1 c. onion, chopped
  • 1 scant c. bell pepper, chopped
  • 2 c. celery, chopped
  • 2 cloves garlic, minced
  • 6 (7 oz.) cans tomato sauce
  • 10 oz. tomato paste
  • 4 Tbsp. Worcestershire sauce
  • 3 1/2 oz. catsup
  • 2 tsp. salt
  • 1 1/2 tsp. black pepper
  • 3 c. chicken broth
  • 1 pkg. spaghetti

    Season sufficient amount of flour for amount of chicken being used with pepper and seasoned salt in a bowl.

    Dredge chicken in flour mixture thoroughly.

    Dip floured chicken into bowl of evaporated milk to which a small amount of oil has been added. Roll chicken in crushed corn flake crumbs, which are made by crumbling corn flake cereal in the blender or food processor. Place pieces in lightly oiled (1/4-inch) pan with the breast side up.

    Bake in slow oven (300°), uncovered, for 1 hour and 15 minutes or until well browned.

    Remove from oven before crumbs become burned looking around the edges.
