Chicken Spinach Patties

Ingredients

  • 1 boned and skinned chicken breast (into chunks)
  • 1/2 slice whole wheat bread
  • 1/4 c. thawed spinach (frozen)
  • 1 egg yolk
  • 1/2 tsp. salt
  • 1 Tbsp. vegetable oil

Directions

    Put all ingredients except vegetable oil in a food processor and process until finely ground.

    Form small patties and saute in oil in medium skillet over medium-high heat.

    Flip until brown on both sides 1 minute.

    Serve when cool.
