- 5 lb. chicken, cut in pieces
- 1/4 c. oleo
- 1 small onion, sliced
- 2 stalks celery, sliced
- 1 carrot, sliced
- 1/2 lemon, quartered
- 1 bay leaf
- 2 tsp. salt
- 1/4 c. unsifted flour
- black pepper
Directions

1Wash chicken and pat dry with paper towels.

2In a large pot, brown chicken in oleo on both sides.

3Remove from heat.

4Add onion, celery, carrot, lemon, black pepper and bay leaf.

5Cover with boiling water.

6Bring to a boil; then reduce heat and cover. Let simmer 45 minutes.

7Add salt; cook, covered, one hour until chicken is tender.
