- 1 tablespoon olive oil
- 1 onion sliced
- 1 clove garlic minced
- 1 pound chicken breasts sliced
- 9 ounces button mushrooms thickly sliced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1/2 cup white wine
- 1/2 cup chicken stock or water
- 1/2 cup sour cream
- 1 tablespoon fresh parsley chopped
- rice to serve
- vegetables green, to serve
Directions

1Heat oil in a frying pan over medium heat. Sweat onion and garlic for 4-5 mins, or until onion is tender. Add chicken and cook, stirring, for 3-5 mins, or until browned. Add mushrooms and cook for 3 mins. Add tomato paste and paprika then wine and stock. Bring to a boil, reduce heat and simmer for 5-10 mins.

2Just before serving, stir in sour cream and parsley. Serve with rice and green vegetables.
