- 8 chicken breast halves, skinned, boned and flattened
- 4 servings rice
- 6 green onions, chopped
- 1/2 green pepper, chopped
- 1 medium tomato, chopped
- salt and pepper to taste
- 1 can cream of mushroom soup
- 1/2 soup can water
- 1/4 c. cooking sherry
Directions

1Cook rice.

2To rice add onions, green pepper, tomato, salt and pepper.

3Toss well.

4Stuff breasts (secure with toothpicks, if needed).

5Place in baking dish or pan.

6Mix together mushroom soup, water and sherry.

7Pour over chicken.

8Bake at 350° for 45 minutes or until done.
