Ingredients
- 1 (2 to 3 lb.) chicken (frying)
- 1 (No. 2) can chunk pineapple
- 3 Tbsp. cornstarch
- 2 Tbsp. brown sugar
- 2 1/2 Tbsp. soy sauce
- 1 c. chopped celery
- 1 chopped green pepper
- salt and pepper
- paprika
- 3 Tbsp. cooking oil
Directions

1Mix cornstarch, salt, pepper and paprika.

2Roll pieces of chicken in mixture.

3Fry in oil until brown.

4Cover and let simmer.

5Put pineapple chunks, celery and shredded pepper under chicken and simmer 5 minutes.

6Mix juice of pineapple, cornstarch mixture, brown sugar and soy sauce.

7Pour over chicken, bring to boil and simmer 20 minutes (more for flavor).

8Serve with rice (2 or 3 cups cooked).
