Chicken Tomato Soup

  • 6 chicken breasts, deboned, skinned and cut in 1-inch strips
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 (14 1/2 oz.) cans plain stewed tomatoes with onion and green peppers
  • 2/3 c. picante sauce
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 2 cloves garlic, minced
  • 2 Tbsp. vegetable oil
  • 2 (15 oz.) cans pinto beans, drained
  • 1 tsp. cumin
  • sour cream
  • green onion
  • Cheddar cheese

Directions

    Saute chicken, green pepper, onion and garlic in oil until tender.

    Add other ingredients, reduce heat and simmer 20 minutes. Garnish with sour cream, chopped green onion and Cheddar cheese, grated.
