  • 4 chicken breasts
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 1 12 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 cup fat-free chicken broth
  • 1 12 teaspoons dried herbes de provence
  • 1 teaspoon butter
  • 1 teaspoon fresh lemon juice

Directions

    Beat chicken to 1/2 inch thick.

    Sprinkle chicken w/salt and pepper.

    Heat oil in a large nonstick skillet over medium heat.

    Add chicken to oil and cook 6 minutes on each side.

    Remove chicken from pan and keep warm.

    Add garlic to pan and cook 1 minute.

    Add broth and herbes de provence and bring to a boil and deglaze.

    Cook until broth mixture is reduced to 1/2 cup, about 3 minutes.

    Remove from heat.

    Add butter and lemon juice to pan stirring until melted.
