Chicken-Wild Rice Soup

- 1 small onion, chopped
- 1/2 c. thinly sliced celery
- 2 c. hot water
- 1/2 c. quick cooking wild rice
- 1 tsp. instant chicken bouillon
- 1/2 c. sliced, fresh mushrooms
- 1 Tbsp. butter or oleo
- 1 c. cubed, uncooked chicken (about 6 oz.)
Directions

1Combine onion, mushrooms, celery and butter in 1-quart glass mix 'n pour bowl.

2Microwave on High, uncovered, 2 to 3 minutes or until vegetables are just about tender.

3Add water, chicken, wild rice and bouillon.

4Microwave on High, uncovered, 5 to 6 minutes or until mixture boils.

5Let stand 5 minutes, then microwave on High 2 to 2 1/2 minutes or until hot.

6Makes about 2 servings, 310 calories each.
