- 1/3 cup olive oil
- 4 skinless chicken breasts, pounded to 1/4 inch
- 1 1/2 teaspoons season salt
- 1 1/2 teaspoons fresh coarse ground black pepper
- 1/3 lb mushroom, sliced
- 3 tablespoons capers
- 1/2 cup white wine
Directions

1Sprinkle chicken with season salt and pepper.

2Heat olive oil in a frying pan.

3Saute chicken on both sides until golden brown.

4Remove to warm serving platter.

5In the same pan saute mushrooms, 1 or 2 minutes.

6Add wine, cook for 2 minutes.

7Add capers, just to heat.

8Pour mixture over chicken.
