Ingredients

  • 3 to 4 lb. fryer, cut up
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. olive oil
  • 3/4 c. chopped onion
  • 2 cloves minced garlic
  • 1 green pepper, chopped
  • 1 c. canned tomatoes, drained
  • 1 bay leaf
  • 3 c. chicken broth
  • 1/2 tsp. saffron-curry powder
  • 4 c. rice
  • 1 (8 oz.) can peas
  • 2 pimentos

Directions

    Brown chicken in olive oil. Remove from skillet. Add onion, garlic and pepper to remaining oil; saute 10 minutes.

    Add tomatoes; cook 5 minutes. Add chicken, bay leaf, chicken broth, salt and pepper.

    Bring to a boil. Add rice. Cover and bake at 350° for 25 minutes. Add peas and pimentos. Bake for 10 minutes longer.
