- 1/8 c. chopped onions
- 1 Tbsp. diet margarine
- 1 Tbsp. flour
- 1/3 c. milk
- 2 oz. cooked, diced chicken
- 1/2 c. mushrooms (plus)
- 1/2 c. cooked rice
- 1 oz. sharp cheese
Directions

1Saute onions in margarine.

2Add flour and milk; mix together. Cook over low heat until thick, stirring constantly.

3Add chicken and mushrooms.

4Mix together cooked rice and more mushrooms (if you would like).

5Layer rice and chicken; cook in small casserole dish. Top with sharp cheese.

6Bake at 350° for 20 minutes.
