  • 1/8 c. chopped onions
  • 1 Tbsp. diet margarine
  • 1 Tbsp. flour
  • 1/3 c. milk
  • 2 oz. cooked, diced chicken
  • 1/2 c. mushrooms (plus)
  • 1/2 c. cooked rice
  • 1 oz. sharp cheese

Directions

    Saute onions in margarine.

    Add flour and milk; mix together. Cook over low heat until thick, stirring constantly.

    Add chicken and mushrooms.

    Mix together cooked rice and more mushrooms (if you would like).

    Layer rice and chicken; cook in small casserole dish. Top with sharp cheese.

    Bake at 350° for 20 minutes.
