Chickpea Casserole

Ingredients
- 4 c. chickpeas
- 1 1/2 tsp. salt
- 2 Tbsp. olive oil
- 2 medium onions
- 3 medium raw tomatoes
- 1 c. tomato paste
- 1 c. water
- 1 tsp. coriander (ground)
- 1 tsp. cumin seed
- 1 tsp. cayenne pepper
- 1/4 tsp. turmeric (ground)
- 1/2 medium red onion
- 1/2 c. cilantro, chopped
Directions

1Soak the chickpeas overnight in water to cover.

2Drain and add water to cover to a depth of 1 1/2 inches.

3Add salt and simmer 2 hours or longer, until the chickpeas are tender.

4Meanwhile, chop the tomatoes and slice the onions.

5Heat the oil in a saucepan. Add the onions and cook until wilted.

6Add the tomatoes, tomato paste, water and spices.

7Add the chickpeas and simmer 30 minutes longer.

8Serve hot over rice, garnished with the red onion cut into rings and chopped cilantro.

9Makes 12 servings (1 cup each). Preparation time:
