  • 1/4 c. melted butter
  • 5 eggs, hand beaten
  • 1/4 c. flour
  • 1/2 tsp. baking powder
  • dash of seasoned salt
  • 1 (4 oz.) can chopped green chiles
  • 8 oz. cottage cheese
  • 1/4 lb. Monterey Jack cheese, grated
  • 1/4 lb. sharp Cheddar, grated
  • 1 green onion, finely chopped

    Mix everything together and pour into an 8 x 8-inch pan that has been sprayed with cooking spray (e.g.

    Bake for 15 minutes at 400°.

    Reduce heat and bake at 350° for 35 to 40 minutes, until lightly browned.

    Cut into small squares when slightly cooled.
