- 5 eggs, hand beaten
- 1/4 c. flour
- 1/2 tsp. baking powder
- dash of seasoned salt
- 1 (4 oz.) can chopped green chiles
- 8 oz. cottage cheese
- 1/4 lb. Monterey Jack cheese, grated
- 1/4 lb. sharp Cheddar, grated
- 1 green onion, finely chopped

1Mix everything together and pour into an 8 x 8-inch pan that has been sprayed with cooking spray (e.g.

3Bake for 15 minutes at 400°.

4Reduce heat and bake at 350° for 35 to 40 minutes, until lightly browned.

5Cut into small squares when slightly cooled.

6Can be served hot or cold.

8If using glass pan, reduce heat by 25°.
