  • 1 cup Quinoa
  • 1 can Corn (drained)
  • 3 cup Fresh spinach
  • 1/2 cup Chopped/diced red onion
  • 1/4 cup Ranch
  • 1 tbsp New Mexico red chile (cayenne for substitute)
  • 1 Lime salt (beer salt)
  • 1 Oregano
  • 1 Salt and pepper

Directions

    Cook quinoa according to directions.

    Mix all ingredients together in a large bowl.
