  • 8 New Mexico chile peppers or any thick fleshed peppers such as pasilla peppers
  • 1 1/2 c. shredded Monterey Jack cheese or white Cheddar cheese
  • 1/4 c. thinly chopped green onions
  • 1/4 c. chopped fresh cilantro
  • 1 c. finely crushed tortilla chips*
  • salsa
  • sour cream
  • cooking oil
  • 1 beaten egg with 1 Tbsp. water
