Ingredients

  • 3 lb. venison ground meat
  • 1/4 c. olive oil,
  • 6 Tbsp. chili powder
  • 3 Tbsp. paprika
  • 10 cloves garlic, finely chopped or 1 Tbsp. powder
  • 2 tsp. cumin
  • 1 tsp. powdered oregano
  • 2 tsp. salt
  • 2 cans pinto beans (optional)

Directions

    In 6-quart pot over high heat, sear meat in olive oil until gray, not brown.

    Add 1 quart water; mix well and simmer 1 hour, stirring occasionally.

    Pour off all water; add all seasonings to meat in the 6-quart pot.

    Add 1 quart water.

    Simmer 30 minutes and adjust taste.

    Add cayenne pepper for heat.

    Thicken with cornmeal blended with water into a paste and stir well.

    Add beans for added flavor and shredded cheese to make it even better.
