- 3 lb. lean beef
- 1/4 c. olive oil
- 1 qt. water
- 6 Tbsp. chili powder
- 3 tsp. salt
- 10 cloves finely chopped garlic
- 1 tsp. ground cumin
- 1 tsp. red pepper
- 1 Tbsp. sugar
- 3 Tbsp. paprika
- 3 Tbsp. flour
- 6 Tbsp. cornmeal
Directions

1When olive oil is hot in a 6-quart pot, add the meat and sear until it is grey.

2Add one quart water, cover and cook at simmer 1 1/2 hours.

3Add all the remaining ingredients, except the flour and cornmeal.

4Cook 30 more minutes.

5Next, add the flour and meal mixed with one cup water.

6Cook 5 minutes more to see if more water is needed for the right consistency.

7If there is too much fat, skim off before adding the flour and meal.
