- 1 lb. chicken breast halves
- 1 Tbsp. cooking oil
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1 small red pepper, chopped
- 1 clove garlic, minced
- 1 (15 oz.) can Hormel no bean chili
- 1 (14 to 15 oz.) can Mexican stewed tomatoes
- prepared rice (for 6 servings)
- dash of hot pepper sauce
- 3/4 c. shredded Monterey Jack cheese
Directions

1In a large skillet, saute poultry in oil until no longer pink. Set aside.

2In same skillet, cook onion, peppers and garlic until tender. Drain. Stir in chili and tomatoes.

3Add rice and pepper sauce.

4Arrange chicken on top.

5Simmer 10 minutes.

6Top with shredded cheese.
