  • 1 c. corn meal
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs
  • 8 1/2 oz. can creamed corn
  • 1/2 c. butter, melted and slightly cooled
  • 1 c. sour cream
  • 1 c. grated Cheddar cheese
  • 2 or 3 whole canned green chilies, seeded and chopped fine

Directions

    Stir together corn meal, baking powder, salt, eggs, corn, butter and sour cream. With a spoon, beat until combined.

    Stir in cheese and chilies. Turn into an 8-inch square glass baking dish and bake in preheated 350° oven until a cake tester comes out clean, about 45 minutes.
