Chili Pepper Quiche

  • pastry for 9-inch pie
  • 1 1/2 c. (12 oz.) shredded Monterey Jack cheese, divided
  • 3 eggs
  • 1 c. (8 oz.) shredded Cheddar cheese
  • 1 (4 oz.) can chopped green chilies, drained
  • 1 c. half and half (can substitute skim milk)

    Bake pastry shell for 3 minutes at 400°.

    Prick with fork. Bake 5 minutes longer.

    Cool.

    Layer Cheddar cheese, 3/4 cup Monterey Jack cheese, chilies and remaining Monterey Jack cheese in shell.

    Beat eggs until foamy.

    Stir in half and half.

    Pour mixture into pastry shell.

    Bake at 350° for 1 hour or until set.
