- 1 1/2 c. (12 oz.) shredded Monterey Jack cheese, divided
- 3 eggs
- 1 c. (8 oz.) shredded Cheddar cheese
- 1 (4 oz.) can chopped green chilies, drained
- 1 c. half and half (can substitute skim milk)
Directions

1Bake pastry shell for 3 minutes at 400°.

2Prick with fork. Bake 5 minutes longer.

3Cool.

4Layer Cheddar cheese, 3/4 cup Monterey Jack cheese, chilies and remaining Monterey Jack cheese in shell.

5Beat eggs until foamy.

6Stir in half and half.

7Pour mixture into pastry shell.

8Bake at 350° for 1 hour or until set.
