  • 1 (7 oz.) can chili peppers (whole)
  • 1 lb. Jack cheese
  • 4 eggs, separated
  • pinch of salt
  • 3 Tbsp. flour
  • 1/2 c. evaporated milk

Directions

    Wash peppers; remove seeds and drain on paper.

    Layer peppers and cheese in casserole.

    Beat egg whites until stiff.

    Beat egg yolks slightly.

    Add salt, flour and evaporated milk; stir until smooth.

    Add to beaten whites.

    Pour over chili and cheese in casserole.

    Bake at 350° for 45 minutes.
