  • 1 can Ortega chilies
  • 1 can (large) evaporated milk
  • 4 eggs
  • 3 Tbsp. flour
  • salt
  • 1 lb. Cheddar cheese
  • 1 lb. Monterey Jack cheese

Directions

    Shred cheeses on bottom of pan.

    Layer chilies, then cheese again.

    Beat egg whites until stiff.

    Beat yolks, milk, flour and salt until smooth.

    Fold in egg whites into yolk mixture and spread over chilies and cheese.

    Bake at 350° for 30 minutes in cake pan.
