- 1/4 lb. margarine
- 3 eggs
- 3/4 tsp. salt
- 2 c. milk
- 1 c. biscuit mix
- 1 (4 oz.) can mild chilies, drained
- 1 lb. Monterey Jack cheese, cubed or shredded
Directions

1Melt stick of margarine in shallow casserole.

2Mix melted margarine with eggs, salt, milk and biscuit mix.

3Place chilies in bottom of casserole.

4Pour egg mixture over chiles.

5Top with Monterey Jack cheese.

6Bake at 350° about 50 minutes or until brown.

7Before serving, garnish with red and green cherry peppers or a couple of slices of bell pepper.
