  • 1/4 lb. margarine
  • 3 eggs
  • 3/4 tsp. salt
  • 2 c. milk
  • 1 c. biscuit mix
  • 1 (4 oz.) can mild chilies, drained
  • 1 lb. Monterey Jack cheese, cubed or shredded

Directions

    Melt stick of margarine in shallow casserole.

    Mix melted margarine with eggs, salt, milk and biscuit mix.

    Place chilies in bottom of casserole.

    Pour egg mixture over chiles.

    Top with Monterey Jack cheese.

    Bake at 350° about 50 minutes or until brown.

    Before serving, garnish with red and green cherry peppers or a couple of slices of bell pepper.
