Chili Rellenos Casserole

Ingredients

  • 3 cans whole green Ortega chilies
  • 1 (8 oz.) can tomato sauce
  • 1 lb. Monterey Jack cheese, shredded
  • 1 lb. Cheddar cheese, shredded
  • 1 can evaporated milk
  • 4 eggs, beaten
  • 3 Tbsp. flour
  • Parmesan cheese (as desired)

Directions

    Line 13 x 9-inch baking dish.

    Layer with whole green chilies, Cheddar and Monterey Jack cheese.

    Repeat layers until chilies are all used.

    Beat eggs, flour and milk.

    Pour over layered mixture. Bake at 350° for 30 to 35 minutes.

    Pour tomato sauce over casserole and bake additional 10 minutes.

    Sprinkle Parmesan cheese over top.

    Cool 15 to 20 minutes before serving.
