- 1 1/2 lb. boneless beef chuck shoulder roast
- 1 Tbsp. olive oil
- 1 Tbsp. low sodium soy sauce
- 1 clove garlic, crushed
- 1/3 c. coarsely chopped fresh cilantro
- 1 c. prepared medium or hot chunky salsa
- 2 Tbsp. packed brown sugar
- 2 Tbsp. lime juice
- 2 c. cooked rice
Directions

1Trim fat from beef roast.

2Cut roast into 1 1/4-inch pieces. In Dutch oven, heat oil over medium heat until hot.

3Add beef and brown evenly, stirring occasionally.

4Pour off drippings if necessary.

5Stir salsa, sugar, soy sauce and garlic into beef. Bring to a boil; reduce heat to low.

6Cover tightly and simmer 1 hour.

7Remove cover; continue cooking, uncovered, an additional 30 minutes or until beef is tender.

8Remove from heat.

9Stir in chopped cilantro and lime juice.

10Spoon beef mixture over rice. Makes 4 servings.
