Chili With Lentils

- 1 lb. dry lentils
- 1 tsp. salt
- 5 c. boiling water
- 1 (16 oz.) can tomatoes or tomato sauce
- 1 1/2 Tbsp. chili powder
- 1 medium onion, chopped
- 1/2 c. celery, chopped
- 1 clove garlic, minced
Directions

1Rinse dry lentils.

2Pick out any stems or stones.

3Add salt and dry lentils to boiling water.

4Cover and simmer 30 minutes. Do not drain.

5Add tomatoes or tomato sauce, chili powder, onion, celery and garlic; cover and simmer 30 minutes more.

6Serve over rice, spaghetti or corn chips.
