- 4 egg whites
- 1/4 c. flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1 small onion, chopped
- 2 c. shredded sharp Cheddar cheese
- 6 canned green chillies
- 3 Tbsp. oil
Directions

1Beat egg yolks until thick and lemon colored.

2Beat egg whites in a separate bowl until stiff peaks form.

3Fold beaten egg whites into egg yolks.

4Sift in flour, baking powder and salt.

5Mix well gently.

6Combine onion, Cheddar cheese and stuffed canned chillies.

7Dip in batter, coating well.

8Fry in oil until brown on all sides, turning once.

9Drain and serve.
