- 1 kilogram mussels scrubbed and cleaned
- 3 garlic cloves crushed
- 6 tomatoes lrgs Ripe, chopped
- 1 cup dry white wine chenin blanc
- 1 red chilli chopped
- 2 spring onions finely sliced with green
- 2 tablespoons chopped parsley Finely
Directions

1Preheat a heavy based pot on low heat for a few minutes.

2Brush base lightly with olive oil.

3Gently cook garlic for 1 minute.

4Add tomatoes, wine and chilli.

5Increase heat to medium.

6Bring to the boil.

7Reduce heat to low and simmer for 10 to 15 minutes or until tomatoes are mushy.

8Increase heat to medium.

9Add mussels and spring onions.

10Cook for 3 to 5 minutes or until mussels open.

11Discard any which remain closed.

12Sprinkle with parsley.

13Serve with crusty Italian bread to mop up the sauce.
