Ingredients
- 4 to 5 lb. duck
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. ground cloves
- 1/8 tsp. anise seed
- 1/8 tsp. fennel seed
- 1/8 tsp. cinnamon
- water
- oil (for frying)
- 1 egg, beaten
- 1/2 c. dry cracker meal
- Chinese vegetables
- shredded lettuce
- 2 green onions, finely chopped
Directions

1Combine spices in a large pot.

2Add duck and enough water to cover.

3Simmer 45 minutes.

4Remove duck from pot, reserving 2 cups broth.

5Heat 1/2-inch oil in a

6large frying pan and fry duck on each side about 5 minutes until well browned.

7Cool duck.

8Remove meat from the bones in as large pieces as possible.

9Dip the duck in egg and then in crumbs before frying in the same oil.

10Cut duck into 2-inch pieces and serve over Chinese vegetables.

11Top with lettuce and onions.

12If desired, make gravy with the reserved duck broth and 4 tablespoons flour and serve on the side with rice. Serves 3 to 4.
