- 4 c. cooked rice, cooled
- 2 to 3 eggs
- 1 1/2 tsp. dry sherry
- 2 Tbsp. onion, chopped fine
- 5 Tbsp. cooking oil
- 1 tsp. Chinese brown gravy (at least)
- 2 tsp. salt
Directions

1Beat eggs; add salt and sherry.

2Set aside.

3Heat oil (medium-high); saute onion until soft.

4Add beaten egg mixture and scramble cook until dry and crumbly.

5Add cooked rice and brown gravy.

6Add soy sauce, if desired, to taste (do not add too much or rice will become sticky).

7Brown coloring comes from Chinese brown gravy (purchase in Chinese section of grocery store). Secret...cook rice before frying.
