Chinese Fried Rice

Ingredients

  • 1/4 c. margarine or butter
  • 3 eggs, slightly beaten
  • 3 c. cold, cooked rice
  • 1 1/2 c. diced, cooked pork, chicken, ham or shrimp
  • 1 can bean sprouts, drained (or fresh bean sprouts)
  • 1/2 c. sliced mushrooms
  • 1/4 c. green onions, cut fine
  • 2 Tbsp. soy sauce
  • salt and pepper to taste

Directions

    Melt butter or margarine in large skillet.

    Add eggs and cook until firm but not hard, stirring with fork.

    Add rice and cook 5 minutes, stirring constantly.

    Add remaining ingredients and cook about 10 minutes more.

    If dry, add small amount more butter. Serves 4 to 6.
