Chinese Fried Rice

- 1/4 c. margarine or butter
- 3 eggs, slightly beaten
- 3 c. cold, cooked rice
- 1 1/2 c. diced, cooked pork, chicken, ham or shrimp
- 1 can bean sprouts, drained (or fresh bean sprouts)
- 1/2 c. sliced mushrooms
- 1/4 c. green onions, cut fine
- 2 Tbsp. soy sauce
- salt and pepper to taste
Directions

1Melt butter or margarine in large skillet.

2Add eggs and cook until firm but not hard, stirring with fork.

3Add rice and cook 5 minutes, stirring constantly.

4Add remaining ingredients and cook about 10 minutes more.

5If dry, add small amount more butter. Serves 4 to 6.
