- 1 lean pork chop
- 1/4 c. minced ham
- 1/4 c. vegetable oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1/2 c. parsley
- 1 clove garlic, minced
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. ginger (optional)
- 3 to 4 c. rice, cooked
- 4 eggs
Directions

1Cut pork in julienne strips and cook with ham in 2 tablespoons oil until brown.

2Add onion, green pepper, parsley and garlic. Cook until tender.

3Add remaining oil, salt, pepper, ginger and rice.

4Stir lightly to mix.

5Make a well in center of rice mixture, add eggs and cook until semi-solid.

6Then stir into rice mixture while cooking over medium heat, 2 to 3 minutes.
