- 1/2 c. finely diced ham, cooked chicken or pork
- 2 Tbsp. oil
- 1 (3 oz.) can broiled mushrooms
- 1 1/2 Tbsp. finely chopped green onion
- 1 qt. cold cooked rice
- 2 or 3 Tbsp. soya sauce
- 1 well-beaten egg
Directions

1Fry meat lightly in oil, add mushrooms, green onion, rice and soya sauce.

2Continue to cook over low heat 10 minutes.

3Add egg. Cook 5 minutes, stirring frequently.

4If darker color is wanted, add more soya sauce.

5Serves 6 to 8.
