- 2 Tbsp. oil
- 2 c. onions, coarsely chopped
- 2 c. cooked rice (cold)
- 2 eggs, slightly beaten
- 1 Tbsp. soy sauce
- 1/2 tsp. salt and pepper
Directions

1Heat pan; add oil and fry onions until brown.

2Add cold rice and saute.

3Add eggs, seasoned with soy sauce and salt.

4Saute until done.

5If you don't like shrimp, add anything like ham, chicken, green pepper or bacon.

6Serves 6.
