  • 2 tbsp (30 ml) oil
  • 2 cups (475 ml) onions, coarsely chopped
  • 2 cups (475 ml) cold cooked rice
  • 2 eggs, slightly beaten
  • 1 tbsp (15 ml) soy sauce
  • 1/2 tsp (2 ml) salt

Directions

    Heat pan; add oil and fry onions until brown.

    Add rice and saute.

    Add eggs, season with soya sauce and salt.

    For variety add 2 C chopped cooked meat, green peppers or peanuts.
