Ingredients
- 1 lb. Neese's sausage
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 1/2 c. celery, chopped
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) can tomato sauce
- 1/2 c. water
- 1/2 c. white wine
- 1 1/2 tsp. salt
- dash of freshly ground pepper
- 1/2 lb. spaghetti, cooked and drained
- 1/2 c. grated Cheddar or Parmesan cheese
Directions

1Break sausage into small pieces and brown slowly in skillet. Add onion, garlic and celery and saute until soft.

2Spoon off any excess drippings.

3Stir in tomato paste and tomato sauce; add water, wine, salt and pepper.

4Simmer 20 minutes or up to an hour to blend flavors well.

5Spoon over spaghetti.

6Sprinkle cheese on top.

7Makes four servings.
