Chocolate And Raspberry Mousse

Ingredients

  • 1 lb frozen raspberries, defrosted, drained
  • 3 tbsp powdered sugar
  • 2 None eggs, separated
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 4.5 oz dark chocolate, melted
  • 3/4 cup heavy cream
  • 1/2 cup salted pistachios

Directions

    Combine raspberries and powdered sugar. Set aside.

    Whip egg yolks, sugar and vanilla over a double boiler until creamy. Remove from heat and fold in chocolate. Whip heavy cream to stiff peaks then fold in. Beat egg whites until stiff then fold in.

    Distribute raspberries between 4 serving bowls. Spoon chocolate mousse over top. Chill for 2 hours. Serve sprinkled with pistachios.
