  • 16 oz. cooked beets, pureed
  • 3 eggs
  • 1 1/2 c. brown sugar
  • 1 c. oil
  • 1 1/2 c. flour
  • 2 Tbsp. cocoa
  • 1 1/2 tsp. soda
  • 1 tsp. ginger
  • 1/4 tsp. cloves
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

    Puree the cooked beets; put aside.

    Beat together the eggs, brown sugar and oil.

    Add beets and the remaining ingredients. Bake in a 9-inch greased pan at 350° for 30 to 35 minutes.
