- 2 12 cups rice flour
- 1 12 cups white sugar (or splenda)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 12 teaspoons xanthan gum
- 12 cup cocoa powder
- 23 cup oil
- 1 tablespoon vanilla
- 1 tablespoon vinegar
- 2 cups clear soda pop (7-up or sprite)
Directions

1Preheat oven to 350 degrees Fahrenheit.

2Prepare a 9x13 pan.

3Combine rice flour, sugar or Splenda, baking soda, salt, xanthan gum, and cocoa powder in a bowl.

4Add oil, vanilla, vinegar, and soda pop, with the soda pop last.

5Stir (do not whip) until combined.

6Pour in prepared pan.

7Bake 35 to 40 minutes or until cake tests done.

8Frost when cool or dust with powdered sugar if desired.
