Chocolate Cherry Granola

- 4 cups Rolled Oats (I Used Trader Joe's Gluten Free Oats)
- 1 cup Unsweetened Shredded Coconut
- 1 cup Slivered Almonds
- 1/4 cups Coconut Oil
- 1/4 cups Coconut Sugar
- 1/2 cups Unsweetened Cocoa Powder
- 1/4 cups Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 cup Dried Cherries
- 1/2 cups Chocolate Chips (optional)
Directions

1Preheat oven to 275 F. Line a rimmed baking sheet with parchment paper; set aside.

2In a bowl, add rolled oats, shredded coconut and slivered almonds; set aside.

3In a small saucepan set over low heat, add coconut oil, coconut sugar, cocoa powder and maple syrup.

4Whisk constantly until sugar is melted and the sauce starts to pull away from the sides of the pan, about 5 minutes.

5Remove pan from heat and whisk in vanilla extract.

6Quickly pour chocolate mixture over oats and mix well.

7Take your time mixing, you wanted everything covered in your chocolate sauce.

8Pour granola onto prepared baking sheet and gently press the granola down.

9Bake in the oven for 38 minutes.

10Turn oven off and leave the oven door slightly opened for about 30 minutes more.

11Once granola is cooled, remove pan from oven, mix in dried cherries and if desired add a handful of chocolate chips.
