  • 1/2 c. oil
  • 1 egg
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 rounded Tbsp. cocoa

    Beat sugar, oil and egg together.

    Add the remaining ingredients, alternating with 1 cup of boiling water.

    Last, add 1 teaspoon vanilla.

    Makes very thin batter.

    Bake at 350° for about 15 minutes or until a toothpick comes out clean.

    Makes 18 cupcakes.
