  • 1 1/4 c. Parkay margarine
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1 egg
  • 2 1/2 c. flour
  • 1/3 c. cocoa
  • 1 tsp. baking powder
  • 1 (8 1/4 oz.) can crushed pineapple, drained
  • 1/2 c. chopped pecans

    Cream the margarine and sugar until light and fluffy.

    Add vanilla and egg.

    Beat well.

    Add combined dry ingredients; mix well.

    Stir in pineapple and nuts.

    Drop rounded teaspoonfuls of dough onto greased cookie sheets.

    Bake at 375° for 12 minutes. Makes approximately 4 1/2 dozen.
