Chocolate Herbal Tea Truffles

Ingredients

  • 2/3 cup heavy cream or thick cream
  • 2 tablespoons unsalted butter leave to soften
  • 2 teaspoons herbal tea loose, used a combination of rose,lavender,lemon grass,rosemary,jasmine e
  • 6 ounces bittersweet chocolate I used swiss bittersweet chocolate
  • 1 teaspoon icing sugar
  • 1 cup Dutch process cocoa powder unsweetened

Directions

    Bring cream and butter to a boil in a small heavy saucepan and stir in tea leaves.

    Remove from heat and let steep 5mins.

    Meanwhile.finely grind or chop the chocolate and transfer to a bowl.

    Pour cream through a fine mesh sieve onto chocolate ,pressing on and discarding tea leaves,add in icing sugar ,then whisk until smooth.
