- 1 (18.25 oz) box chocolate fudge cake mix
- 1/2 cup butter, melted
- 1 None egg
- 2 tbsp all-purpose flour
- 1 tbsp espresso powder, dissolved in 1 tbsp hot water
- 16 oz bittersweet chocolate, melted
- 20 None mint candies, crushed
Directions

1Preheat oven to 350°F. Line 2-3 baking sheets with parchment paper.

2Mix together cake mix, butter, egg, flour and espresso mixture until combined. Scoop into balls using a 1 tablespoon scoop and place 2 inches apart on prepared baking sheets. Bake for 10 mins. Let cool completely on a wire rack. Top each cookie with 1/2 tsp melted chocolate and sprinkle with crushed candy.
